Pick-me-up cake

This coffee cake flavoured with nuts and fruit is sure to provide just the lift you need to get through the day. If you prefer the coffee taste without the caffeine kick, use decaf.

Serves 6 Preparation: 15 min Baking: 45 min

3 eggs

250 ml (1 c) sugar

250 ml (1 c) oil

60 ml (¼ c) ground walnuts

60 ml (¼ c) flaked almonds

250 ml (1 c) flour

5 ml (1 t) baking powder

15 ml (1 T) instant coffee powder

125 ml (½ c) dried cranberries or raisins

5 ml (1 t) vanilla essence

FROSTING

120 g butter, room temperature

15 ml (1 T) instant coffee powder

375 ml (1 ½ c) icing sugar

5 ml (1 t) vanilla essence

Preheat the oven to 180 °C. Grease a loaf tin.

Whisk the eggs, sugar and oil together.

In a separate bowl mix the ground walnuts, almonds, flour, baking powder and coffee powder.

Add the dry mixture to the wet mixture and whisk to combine. Add the dried fruit and vanilla essence and give it one more whisk.

Pour the batter into the loaf tin and bake for 45 minutes or until done (a knife inserted in the middle should come out clean).

Let it cool for few minutes then turn out on a wire rack to cool completely.

Frosting: Use an electric whisk to beat the butter and coffee powder together until creamy. Add the icing sugar ½ cup at a time, mixing well after each addition to incorporate. Add the vanilla essence and beat until thick and creamy.

Spread the frosting over the cooled cake.
