A delicious meatless pasta dish that’s ready in 15 minutes flat from YOU reader Katalin Mercer of Briardene, Durban.

Serves 4-6

Preparation time: 10 min

Cooking time: 5 min

15 ml (1 T) olive oil

1 onion, chopped

1 green pepper, chopped

2 garlic cloves, crushed

125 g mushrooms, chopped

30 ml (2 T) coriander pesto

30 ml (2 T) sunflower seeds

60 ml (¼ c) piquanté peppers, chopped

250 g penne pasta, cooked

2 rounds feta cheese, crumbled

1        Heat the oil in a frying pan and fry the onion, green pepper, garlic and mushrooms until the onions are translucent.

2        Add the pesto, sunflower seeds and piquanté peppers and simmer over low heat for 1 minute.

3        Put the cooked pasta in a deep serving bowl, add the pesto mix and toss to mix well with the pasta. Add the feta cheese when serving.
