Poached pear with blue cheese crumbs

These spiced poached pears make the perfect winter dessert.

Serves: 4 Preparation time: 5 min Cooking time: 55 min

500 ml (2 c) red wine

80 ml (? c) caster sugar

2 star anise

2 cinnamon sticks

3 whole allspice kernels

4 pears, peeled and cored

80 g blue cheese

15 ml (1 T) icing sugar

10 tennis biscuits

1. In a pot over medium heat combine wine, sugar, star anise, cinnamon and allspice. Cook for 3 minutes or until sugar dissolves. Add the pears and bring to a boil. Reduce heat to simmer for 40 minutes or until pears are tender. Remove the pears with a slotted spoon.

2. Increase the heat and boil the syrup until thickened. Place the blue cheese, icing sugar and biscuits in a blender and blitz till roughly crumbled.

3. Sprinkle crumbed mixture over the serving plates and top with pear. Drizzle the syrup over.
