Poached pear with custard

Beat the Monday madness with something deliciously decadent...

Preparation time: 10 min

Cooking time: 30 min

Serves: 6

6 pears, peeled

1 orange, juice and zest

375 ml (1 ½ c) sweet white wine

375 ml (1 ½ c) warm water

250 ml (1 c) sugar

1 cinnamon stick

4 cloves

2 star anise

Custard

500 ml (2 c) milk

60 ml (¼ c) cream

4 egg yolks

45 ml (3 T) caster sugar

5 ml (1 t) corn flour

1 orange zest

2,5 ml (½ t) vanilla/orange essence

Combine all the ingredients in a saucepan, set over medium heat and simmer for 15 minutes or until soft.

Custard

In a medium pot mix milk and cream on low heat until simmering, then remove.

Whisk egg yolks, sugar and corn flour together in a bowl.

Pour in the hot milk mixture while whisking and return to low heat.

Stir in the orange zest and vanilla/orange essence and serve with the pears.
