Pork and potato bake

Serves 4 Preparation time: 15 min Cooking time: 20 min

100 g butter 15 ml (1 T) oil 1 onion, diced 3 cloves garlic, finely chopped 5 ml (1 t) aniseed 8 pork sausages, alved 80 ml fresh thyme 4 cooked potatoes, chopped salt and pepper to taste

TO FINISH 200 g baby spinach

Heat the butter and oil in a pan and fry the onion and garlic until the onion is transparent.

Add the aniseed and fry for about 3 minutes.

Add the sausages and fry until done.

Add the fresh thyme and potatoes and fry for 5 minutes or until heated through.

Add the spinach and heat until slightly wilted.

Season with salt and pepper if necessary and serve with Quick Onion marmalade (see recipe below)

TIPS: 1. Substitute cheese sausages, chorizo sausages or boerewors for the pork sausages if desired.

2. The perfect companions to this meal are an ice-cold beer and strong mustard.

3. A good way to cook sausages is to boil them in salted water because they stay juicy and succulent.

Quick onion marmalade Slice an onion and sprinkle over 60 ml (¼ c) brown sugar.

Fry until slightly caramelised.

Add 80 ml (? c) brown vinegar and a pinch of mustard.

Cook until liquid has evaporated.
