Pork fillet burgers

Make this your trademark dish for burger nights at home

Serves 4

Preparation time: 10 min

Cooking time: 30 min

SAUCE

30 ml (2 T) oil

1 onion, chopped

4 garlic cloves, chopped

2 jalapeño chillies, chopped

125 ml (½ c) water

1 can (410 g) tomato purée

60 ml (¼ c) tomato paste

125 ml (½ c) Worcester sauce

250 ml (1 c) chutney

45 ml (3 T) sugar

30 ml (2 T) vinegar

BURGER

300 g smoked pork fillet

salt and freshly ground black pepper

15 ml (1 T) oil

4 hamburger buns

lettuce leaves

1 Sauce: Heat the oil in a frying pan over medium heat, add the onion, garlic and chillies and cook until the onion is soft. Add the remaining sauce ingredients and simmer for 30 minutes.

2 Burger: Meanwhile, heat a separate large frying pan over medium heat until very hot. Season the pork fillet with salt and pepper and rub with the oil. Cook the fillet in the hot pan, turning every 2 minutes, for 10 minutes or until cooked through but still moist. Allow the meat to rest then slice.

3 Halve the buns, put lettuce leaves on the bottom halves, add the meat and spoon the sauce over. Top with the remaining bun halves.
