Potato and bacon gratin

With potatoes around, you don't need much more to turn out a magical meal!

Serves 6

Preparation time: 15 min

Cooking time: 1 hour 15 min

1,5 kg baking potatoes

45 ml (3 T) olive oil

sea salt and freshly ground black pepper

250 g bacon, chopped

chopped chives (optional)

2 eggs

80 ml (1/3 c) crème fraîche

1    Preheat the oven to 190 °C.

2    Peel the potatoes, rinse and dry them well. Slice very thinly, mix with the olive oil and season to taste with sea salt and pepper.

3    Layer the potato slices and bacon in a casserole or baking tin. Cover with foil and bake for 1 hour or until the potatoes are soft. Top with chives (if using).

4    Beat the eggs and crème fraîche together and pour over the potatoes. Cover with the foil again and bake for a further 15 minutes, or until the egg mixture is set and heated through. Slice and serve.
