Potato cakes (rosti) with fried chorizo

Serves 4-6

6 large potatoes

3 eggs, whisked

100 ml flour

Salt and freshly ground black pepper

Oil for frying

3 spicy sausages, such as chorizo, sliced

500 ml rocket

125 g Brie cheese, sliced

Peel the potatoes, put them in a dish and cover with cold water.

Grate the potatoes and put them in a large mixing bowl.

Add the eggs, flour, salt and pepper.

Heat oil in a pan and drop large spoonfuls of the potato mixture in the hot oil.

Fry the rosti on both sides until golden and done.

Drain the rosti on paper towels and keep warm.

Fry the chorizo in the same pan for a few minutes.

Put two rosti on each plate and top with the rocket and Brie and chorizo slices.

Tip: Any kind of sausage can be used instead of chorizo.
