Prawn salad

Winning recipe by Gresham Madham of Durban.

 Serves 6

Preparation time: 15 min

Cooking time: 2 min

1 kg prawns, shelled and deveined

salt and pepper

30 ml (2 T) olive oil

15 ml (1 T) butter

250 g mushrooms, halved

1 bag of mixed lettuce leaves

½ cucumber, sliced

1 onion, sliced into rings

1 can (227 g) pineapple pieces

250 g cherry tomatoes, halved

45 g plain croutons

1        Season the prawns with salt and pepper. Heat the oil and butter in a frying pan and fry the prawns and mushrooms for 2 minutes or until the prawns are just cooked. Set aside to cool.

2        In a large salad bowl toss the remaining ingredients, except the croutons. Add the prawns and mushrooms and toss well. Top with the croutons.
