Quick and easy fish tartlets

These tuna tartlets make a delicious pre-dinner treat.

Makes 6-8 tartlets • preparation time: 10 min • cooking time: about 10 min

TARTLETS

  • 1 bunch spring onions, chopped
  • 2-3 cloves garlic, crushed oil
  • 45 ml (3 T) Thai green curry paste
  • few drops of sesame oil
  • 2 cans (185 g each) tuna
  • 1 red pepper, diced
  • 45 ml (3 T) chopped fresh coriander
  • few drops soy sauce
  • 4 eggs, whisked
  • 125 ml (½ c) coconut milk
  • salt and pepper
  • 45 ml (3 T) cake flour

SALSA

  • chopped tomatoes
  • chopped fresh coriander
  • chilli sauce

1 Grease the hollows of a silicone muffin mould with nonstick spray.

2 TARTLETS Microwave the spring onions and garlic in a little oil for 2 minutes or until soft. Add the curry paste and sesame oil and mix.

3 Drain the tuna and add to the spring onions with the red pepper, coriander and soy sauce.

4 Whisk the eggs, coconut milk, salt and pepper to taste and cake flour and add to the tuna mixture. Mix well and spoon into the muffin tin hollows.

5 Microwave for 7 minutes or until the mixture is firm.

6 SALSA Mix the ingredients and serve with the tartlets.
