Quick chilli bean pot

Enjoy this protein-packed meal, cooked in minutes in the microwave.

Serves 4-6

  •  15 ml (1 T) oil
  • 1 onion, chopped
  • handful of fresh coriander, chopped
  • 10 ml (2 t) ground cumin
  • 15 ml (1 T) tomato paste
  • 100 g cherry tomatoes, halved
  • 2 red chillies, chopped
  • 5 ml (1 t) sugar
  • 1 can (400 g) butterbeans, drained
  • 1 can (400 g) kidney beans, drained
  • 1 can (400 g) cannellini beans, drained
  • 1 can (400 g) borlotti beans
  • salt and pepper

1        Put the oil, onion, coriander and cumin in a microwave-safe bowl and microwave on high for 1 minute or until the onion is soft.

2        Stir in the tomato paste and tomatoes and microwave on high for a further 2 minutes.

3        Stir in the rest of the ingredients, except the salt and pepper, and microwave on high for a further 3 minutes.

4        Season with salt and pepper and serve on toasted bread.
