Quick fish soup

This is the perfect quick, full-flavoured soup for a cold night.

Serves 6 Preparation: 5 min Cooking: 20 min 

  • 1 orange, peeled
  • 10 ml (2 t) olive oil
  • 500 g hake fillets, cubed
  • 3 x 400 g chopped tomato
  • 1 onions, finely chopped
  • 1 green chilli
  • 1 lemon grass, bruised
  • 2 sprigs fennel
  • 5 ml (1 t) turmeric
  • 2 bay leaves
  • handful parsley, finely chopped
  • 3 cloves garlic
  • salt and pepper

Preheat the oven to 180 °C.

1 Place the orange peels on a baking tray and place in the oven for 10 minutes or until dried out.

2 Mix the peel with the rest of the ingredients in a large pot over medium heat. Season with salt and pepper. Cover with a lid and simmer for 10 minutes or until the fish is cooked.

3 Serve warm with crusty bread.
