Quick tuna bake

Karen Maritz from Klaarstroom in the Karoo makes a magical tuna bake

Preparation time: 10 min

Cooking time: 30 min

Serves: 6

500 ml (2 c) screw pasta

170 g x 2 cans tuna

250 g mushrooms, sliced

2 spring onions, chopped

250 g cheese & onion crisps, crushed

250 ml (1 c) double cream

4 eggs, beaten

salt and pepper, to taste

250 ml (1 c) mixed cheese (mozzarella and cheddar)

salad to serve

1. Preheat oven to 180 °C. Grease a baking pan. Cook pasta according to the packet instructions and drain.

2. In a bowl combine tuna, mushrooms, spring onion and crisps. In a jug mix cream, eggs, salt and pepper. Pour the cream mixture into the tuna mixture, add half the cheese and mix.

3. In a greased cake tin, add the pasta to cover the surface. Top with the tuna mixture and the leftover cheese. Bake for 30 minutes or until firm. Serve with salad.
