Raisin-bread pudding

We chose raisin bread instead of plain bread for a different taste sensation.

Serves 4-6 • preparation time: 15 min • cooking time: 10 min

  • 10 slices of raisin bread, crusts removed
  • butter
  • apricot jam
  • 125 ml (½ c) brown sugar mixed with 7 ml (1½ t) ground cinnamon
  • generous handful of sultanas, raisins or cranberries
  • 500 ml (2 c) milk
  • 4 eggs
  • salt

1 Sandwich the bread slices with butter and jam and cut into quarters.

2 Grease a microwave-proof dish and sprinkle a generous layer of cinnamon sugar in the dish.

3 Arrange the bread in the dish so the corners point upwards. Scatter sultanas on top.

4 Whisk the milk, eggs and salt and pour the mixture over the bread. Reserve some cinnamon sugar for decoration and sprinkle the remainder on the pudding. Leave until the bread has absorbed the liquid.

5 Microwave for 10 minutes.

6 Leave for 5 minutes and sprinkle on cinnamon sugar.
