Roast vegetables and yellowtail on ciabatta

What a winner - combining the best of veggies with fish!

Serves 4

Preparation time: 5 min

Cooking time: 20 min

1 kg (1 pack) Mediterranean vegetables

1 ciabatta loaf, halved horizontally

salt and freshly ground black pepper

extra-virgin olive oil

fresh coriander to garnish

1 yellowtail fillet

juice of 1 lemon

1 Roast the vegetables according to the packet instructions. Arrange on one ciabatta half. Season with salt and pepper, drizzle with olive oil and sprinkle with half the coriander.

2 Brush the fish with olive oil.

3 Heat a frying pan over high heat until hot. Add the fish, skin side up, for 3 minutes, turn over and cook for 5 minutes. Transfer to the other ciabatta half. Season with salt and pepper, drizzle with lemon juice and garnish with the remaining coriander.
