Most kids aren’t mad about salad, but this delicious Checkers recipe for Caprese on a stick will have them changing their minds.

  • Serves 4 - 6

You'll need:

  • 4 tbsp. basil pesto
  • 24 bocconcini balls/cubes of mozzarella
  • 24 fresh basil leaves
  • 24 cherry tomatoes
  • 24 wooden skewers
  • Olive oil for drizzling

Do this:

Toss the pesto and bocconcini/mozzarella together. Slice the tomatoes in half horizontally and keep the pairs together. Place the skewer through the base of a tomato half, then a bocconcini ball/mozzarella cube, now the basil leaf and finally the other tomato half. Continue until all the tomatoes have been assembled, drizzle with olive oil and serve.

Tip: Tapenade can be used instead of pesto. And if your little ones aren’t too keen on the bocconcini, use any kind of cheese they like.
