Salami and olive pizza

Readymade pizza bases are available in most supermarkets so keep a supply in your freezer to assemble quick meals.

Makes 4 pizzas

4 medium readymade pizza bases

80 ml tomato salsa

about 25 slices salami

200 g olives, drained, pitted and halved

about 20 capers

100 g goat’s milk cheese, sliced

250 ml (1 c) grated Cheddar cheese

30 ml (2 T) fresh oregano

extra olive oil and watercress for garnish

Preheat the oven to 200 °C.

Spread the pizza bases with the tomato salsa.

Divide the salami, olives, capers, goat’s milk cheese slices, Cheddar cheese and oregano among the pizza bases and bake each pizza for 10-15 minutes or until done and golden.

Drizzle a little olive oil over each pizza and pile watercress on top.

TIP

Most bought pizza bases have a tomato base but to make your own mix tomato purée with chopped garlic, season with salt, pepper and sugar and spread on the base.
