Samp bake

This saucy samp bake is a great way to spice up this braai-time staple.

Serves about 4 Preparation time: 20-30 min Soaking time: overnight Cooking time: about 30 min

  • 500 g samp, soaked in water overnight salt
  • 30 ml (2 T) oil
  • 1 onion, finely chopped
  • ½ green pepper, finely chopped
  • 2 garlic cloves, finely chopped
  • 5 bacon rashers, diced
  • 200 g mushrooms, sliced
  • 250 ml (1 c) chicken stock
  • 200 ml boiling water
  • 20 ml (4 t) chutney
  • salt and pepper
  • 250 ml (1 t) fresh cream
  • grated cheese

1 Preheat the oven grill.

2 Drain the samp, transfer to a pot, cover with cold water and cook until done. When cooked, season with salt.

3 Heat the oil and fry the onion and green pepper until soft. Add the garlic and stir-fry until fragrant. Add the bacon and mushrooms and stir-fry until lightly browned.

4 Mix the stock, boiling water and chutney, season with salt and pepper, and add to the onion mixture. Simmer until the water has evaporated. Stir the mixture into the samp.

5 Transfer to an ovenproof dish or cast-iron pot. Pour over the cream and prick the surface with a fork so the cream flows into the samp.

6 Sprinkle cheese on top and grill until the cheese melts.
