Saucy butternut bobotie

Make this yummy dish go further by adding butternut to the mince.

SERVES 4 Preparation time: 20 min Baking time: 30 min

  • 15 ml (1 T) oil
  • 1 onion, chopped
  • 2 garlic cloves, crushed
  • 500 g lean beef mince
  • 1 butternut, cubed
  • 30 ml (2 T) curry powder
  • 60 ml (¼ c) chutney
  • salt and pepper
  • a few bay leaves

 CUSTARD

  • 250 ml (1 c) milk
  • 2 eggs, whisked

Preheat the oven to 180 °C.

1. Heat the oil and fry the onion and garlic. Add the mince and stir-fry. Add the remaining ingredients and simmer. Season and spoon into a dish.

2. CUSTARD Whisk together the ingredients and pour over the mince. Bake for 30 minutes. Serve with rice.
