Shrimp in avo

A starter for a dinner party, or a light, healthy meal for treating yourself.

Serves: 4-6 Preparation: 10 min Cooking: 5 min

  • 3 ripe avocados
  • 1 lime wedge
  • salt
  • 350 g shrimp
  • 1 red chilli, minced
  • ½ red onion, chopped
  • 125 ml (½ c) tin corn
  • a handful of coriander, chopped
  • 30 ml (2 T) lime juice

1. Halve the avocados. Peel the skin off and dispose of the stones. Arrange the avocado halves on a serving platter. Sprinkle with lime juice and salt.

2. Place a pot with a little water over medium heat and bring to the boil. Place the shrimp in a strainer over the pot and steam the shrimp, stirring occasionally until the flesh turns pink an opaque.

3. Place the steamed shrimp in a medium bowl and add the chilli, onion and coriander. Mix well, then add the lime juice. Stir and set aside for 10 minutes.

4. Spoon into the hollow of each avocado half and serve.
