Simple ideas for braai days

The next time you’re in the mood for something different at your braai, try one of these easy ideas.

Quick appetisers

Use bread dough. Roll balls of dough out flat and add a filling of crumbled feta cheese, basil or sundried tomato pesto, chopped olives and/or marinated chopped tomatoes to each dough disc. Roll it up, making sure the filling is well covered. Roll in flour, allow to rise and braai over moderate coals until done and the dough sounds hollow when you tap on it. Serve with olive oil.

Multipurpose spread ? delicious on steaks and chops

Mix 30 ml (2 T) Dijon mustard, 10 ml (2 t) soy sauce and 10 ml (2 t) olive oil together.

Easy-peasy salad

Place mixed lettuce leaves in a bowl. Slice pears or nectarines, if in season, grill quickly over the coals and place on top of the salad leaves. Sprinkle with feta or blue cheese and pour a mustard dressing over. Sprinkle with toasted sunflower seeds.

Cheese for dessert

Boil a variety of whole glacé fruit (500 g in total) in 350 ml Van der Hum liqueur until soft and syrupy. Microwave a Camembert or cambrini for 1-2 minutes until the inside is runny. Spoon the glacé fruit over the cheese and serve for dessert.
