Sloppy Joe sandwich

A deliciously messy mid-week pick-me-up!

Serves 4 Preparation: 10 min Cooking: 20 min

  • 15 ml (1 T) oil
  • 10 g butter
  • 1 onion, chopped
  • 1 red pepper, chopped
  • 2 garlic cloves, minced
  • 2 green chillies, chopped
  • 500 g beef mince
  • 80 ml (¼ c) water
  • 250 ml (1 c) tomato sauce
  • few drops of Tabasco sauce
  • 30 ml (2 T) Worcestershire sauce
  • 15 ml (1 T) Dijon mustard
  • 15 ml (1 T) vinegar
  • 15 ml (1 T) brown sugar
  • salt and pepper
  • 8 slices bread
  • cheese

1 Heat the oil and butter in a pan over medium heat. Add the onion and red pepper; cook for 5 minutes or until soft.

2 Add the garlic and chillies, cook for another minute, stirring often, then add the mince and cook for about 10 minutes.

3 Stir in the water, tomato, Tabasco and Worcestershire sauce, mustard, vinegar, brown sugar and seasoning. Bring to a simmer.

4 Toast the bread and melt cheese on it. Top 4 slices with mince mixture and cover with the remaining slices.
