Smoked pork sausages with sweet onion mix

Serves 4-6

SWEET ONION MIX 40 g butter 1 large onion, sliced 25 ml soft brown sugar 40 ml balsamic vinegar salt and freshly ground black pepper 6 smoked or plain pork sausages 6 hotdog rolls 30 ml mustard 30 ml mayonnaise 30 g fresh rocket

Heat the butter in a saucepan and fry the onion over high heat for a few minutes.

Reduce the heat and add the soft brown sugar and balsamic vinegar.

Season to taste with salt and freshly ground black pepper.

Stir until well mixed and simmer over low heat for about 10-15 minutes.

Meanwhile cook the pork sausages in a griddle pan over low heat until done.

Alternatively cook them in boiling water for about 5 minutes or until done.

Drain and set aside. Halve the hotdog rolls and spread with the mustard and mayonnaise.

Put a sausage in each roll, add some fresh rocket and spoon a little of the onion mixture on top of the sausages.
