Soya bolognaise

Serves 4.

25 ml oil

1 onion, finely chopped

1 green pepper, seeded and diced

100 g dried onion and tomato flavour soya mince, soaked in 375 ml water

2 cloves garlic, finely chopped

15 ml chopped fresh parsley

5 ml dried oregano

100 ml red wine

100 ml water

2 tomatoes, chopped

1 can (115 g) tomato paste

salt and freshly ground black pepper

pinch sugar

Heat the oil and fry the onions and green pepper.

Add soya mince to the pan in small batches, stirring continuously.

Add the garlic, parsley, oregano, red wine, water, tomatoes and tomato paste.

Cover and simmer for 20 minutes or until the mixture forms a thick sauce.

Season with salt and pepper and add sugar to taste.

Serve with pasta.
