Soya chicken with chilli sauce

A dash of chilli in the sauce gives chicken a whole new flavour

Serves 4

Preparation time: 10 min

Cooking time: 35 min

SAUCE

5 ml (1 t) oil

4 chicken drumsticks

2 garlic cloves, thinly sliced

2 spring onions, chopped

1 red chilli

bunch of fresh coriander, chopped

1 litre (4 c) chicken stock

1 lemongrass stalk

salt and freshly ground black pepper

CHICKEN

4 chicken breasts

45 ml (3 T) soya sauce

TO SERVE

chopped red chilli and spring onion to garnish

cooked rice and spinach

Preheat the oven to 200 °C.

Sauce: Heat the oil in a large pot and fry the drumsticks for 5 minutes. Add the garlic, spring onions, chilli, coriander, stock and lemongrass, bring to the boil and simmer for 30 minutes. Strain the sauce, season with salt and pepper and set aside.

Chicken: Put the chicken on a baking tray and cover with the soya sauce. Roast in the oven for 8 minutes a side, basting the chicken with the soya sauce throughout.

To serve: Spoon the sauce into bowls and add a little red chilli and spring onion to each. Spoon the rice into separate bowls. Serve the chicken and spinach on plates with the bowls of sauce and rice.

Tip: Cook the rice in stock with lemongrass, fresh coriander and lemon slices.
