Soya mince curry

A magical mince curry - ideal for Meatless Mondays and vegetarians

Serves 6

Preparation time: 5 min

Cooking time: 15 min

30 ml (2 T) oil

2 cardamom pods

2 bay leaves

1 onion, chopped

2 green chillies, chopped

4 garlic cloves, chopped

200 g soya mince

2 ml (½ t) turmeric

15 ml (1 T) tomato paste

2 ml (½ t) chilli powder

2 ml (½ t) ground cumin

500 ml (2 c) hot water

handful of parsley, chopped

bread or rice to serve

1 Heat the oil in a large frying pan over medium heat and add the cardamom pods and bay leaves. When heated, add the onion, chillies and garlic and fry for 2 minutes. Mix in the soya mince, turmeric, tomato paste, chilli powder and cumin and fry for 2 minutes.

2 Pour in the hot water and simmer for 10 minutes or until thick.

3 Sprinkle with the parsley and serve with bread or rice.
