Spaghetti with mince and veg

This is a perfect family supper – spaghetti with a bolognese sauce packed with vegetables.

Serves 4-6 Preparation: 15 min Cooking: 35 min

  • 1 onion, finely chopped
  • 1 red pepper, finely chopped
  • 2 carrots, roughly chopped
  • 4 baby marrows, finely chopped
  • 150 g butternut, finely chopped
  • 2 cans (400 g each) chopped Mexican-style tomatoes
  • 3 garlic cloves, chopped
  • handful of fresh parsley, chopped
  • handful of fresh basil, torn
  • 125 ml (½ c) chicken stock
  • 5 ml (1 t) sugar
  • salt and pepper
  • 30 ml (2 T) oil
  • 500 g beef mince
  • 500 g spaghetti, cooked
  • grated Parmesan cheese (optional)
  • fresh basil to garnish

1 Mix the onion, red pepper, vegetables, tomatoes, garlic, herbs, stock, sugar, salt and pepper.

2 Heat the oil in a frying pan over medium heat, add the mince and cook, stirring to break it up, for a few minutes.

3 Add the vegetable mixture to the mince, reduce the heat and simmer for 30 minutes or until cooked.

4 Serve the mince over the cooked pasta with a sprinkling of Parmesan cheese (if using) and basil to garnish.
