Breakfast Oven-Pan Pizza

Serves 4-6

INGREDIENTS

Base

  • 3 x 250 ml (3 c) cake flour
  • 22 ml (4½ t) baking powder
  • 5 ml (1 t) salt
  • 250 ml (1 c) All-Bran Flakes or Special K, slightly crunched
  • 2 eggs
  • 375 ml (1½ c) milk
  • 60 ml (1/4 c) oil

Basic tomato topping

  • 2-3 ripe tomatoes, finely diced
  • 2 garlic cloves, chopped
  • olive oil
  • fresh oregano and basil leaves
  • salt and freshly ground pepper to taste

Basic onion topping

  • 2 onions, thinly sliced
  • 2 garlic cloves, chopped
  • olive oil
  • thyme
  • salt and freshly ground pepper to taste

Other toppings

  • Mature Cheddar, biltong and piquant peppers

Preheat the oven to 180 °C. Grease a baking sheet or oven pan.

1. BASE Sift together the flour, baking powder and salt. Then add the Kellogg’s All-Bran or Kellogg’s Special K.

2. Beat the eggs, milk and oil together. Add to the flour mixture and mix until well combined. Press into the prepared oven pan.

3. TOMATO TOPPING Mix together all the ingredients and spread over the pizza base.

4. ONION TOPPING Fry the onions and garlic in oil until soft and slightly caramelised. Season with thyme, salt and pepper. Spoon over the tomato mix.

5. Top with Cheddar cheese, biltong and piquant peppers.

6. Bake for about 15-20 minutes until the crust is done and the cheese has melted.

VARIATION: Instead of the tomato and onion base, spread the base with basil pesto, sprinkle over a good handful of baby tomatoes and finish with bocconcini cheese. Bake until the base is cooked and the cheese has slightly melted.
