Spice up your rice! 3 great rice side dishes

Rice is one of the world’s most important staples and is eaten by people across the globe on a daily basis. These three rice dishes – stuffed peppers with rice, rice balls and rice with stir-fried veggies – aren’t only easy to prepare but packed with flavour and ideal to serve as a side dish or main.

Stuffed peppers with rice Cook 250 ml (1 c) rice. Mix with a can of sweetcorn, shredded cabbage and chopped thyme. Halve 4 green or red peppers, remove the seeds and stuff with the rice mixture. Drizzle with a little olive oil and scatter grated cheese on top. Bake at 180 °C for 20 minutes or until the stuffing is warmed through and the peppers are done.  2. Rice balls Cook 250 ml (1 c) rice and set aside to cool. Mix 30 ml (2 T) butter, 1 whisked egg and 50 g Parmesan cheese. Shape the rice into 10 balls. Dice 150 g mozzarella cheese. Make a hole in each rice ball and stuff with the diced cheese. Dust with flour. Roll the balls in the egg mixture and then in fine breadcrumbs. Chill for at least 15 minutes before deep-frying in oil until golden brown. 

3. Rice with stir-fried veggies

Cook 250 ml (1 c) rice until soft. Heat a little oil in a pan and fry 230 g mixed chopped mushrooms, 4 chopped baby marrows and 4 spring onions until soft and done. Add 1-2 chopped chillies or piquanté peppers and a generous handful of chopped coriander. Mix with the rice and serve with baked fish.
