Spicy chicken with olives

This dish you can make in your microwave. And if you don’t like raisins or sultanas, replace them with shredded dried apricot pieces.

Serves 6

preparation time: 15-20 min

cooking time: about 20 min

15 ml (1 T) olive oil

4 garlic cloves, crushed

2 red onions, thinly sliced

1 red pepper, diced

5 ml (1 t) ground ginger

5 ml (1 t) chilli powder

5 ml (1 t) turmeric

10 ml (2 t) ground coriander

10 ml (2 t) ground cumin

6 chicken breasts, sliced

125 ml (½ c) chicken stock

1 bunch fresh coriander, finely chopped

125 ml (½ c) raisins or sultanas

125 ml (½ c) black olives

5 ml (1 t) finely grated lemon zest Salt To serve 250 ml (1 c) basmati or brown rice, cooked

  1. Mix the oil, garlic, onions, red pepper and spices in a microwave-proof glass bowl and microwave for 5 minutes.
  2. Add the chicken and stock and microwave for 10 minutes or until the chicken is just done.
  3. Mix the remaining ingredients, except the rice and salt, with the chicken mixture and microwave for 2 minutes or until heated through.
  4. TO SERVE Season with salt and serve with cooked basmati or brown rice.
