Spicy prawn pasta

Thanks to YOU reader Sandhaya Maharaj of Westville, Durban for this jummy spicy prawn pasta recipe

500 g prawns, shelled and deveined

50 ml lime juice

30 ml (2 T) honey

30 ml (2 T) garlic, crushed

45 ml (3 T) crushed chilli flakes

30 ml (2 T) canola oil

1 onion, chopped

2 green chillies, chopped

salt to taste

250 g rice noodles, boiled al dente

chopped coriander

Marinate the prawns in lime juice, honey, garlic and crushed chilli flakes for 20 minutes, preferably overnight.

Heat the oil in a wok or saucepan and fry onion until translucent.

Add the green chillies and marinated prawns.

Season with salt to taste and stir-fry the prawns for about 4 minutes.

Remove from heat and toss in the boiled rice noodles.

Toss well and sprinkle over the coriander generously.

Serve on a platter.

*optional: sprinkle over some cashew nuts or toasted sesame seeds before serving.
