Spinach and bacon quiche

Turn teatime into an occasion with this scrumptious quiche

Serves 6 and more

Preparation time: 10 min

Cooking time: 1 hour

400 g shortcrust pastry

FILLING

250 ml (1 c) grated Cheddar cheese

200 g bacon, chopped

5 eggs

100 ml milk

250 ml (1 c) double cream

100 g spinach, finely chopped

salt and pepper

30 ml (2 T) chopped fresh coriander

1.    Preheat the oven to 180 °C and grease a 20 cm cake tin.

2.    Line the cake tin with the pastry, fill with rice or beans and bake blind for 20 minutes. Remove the rice or beans and bake again for 5 minutes.

3.    Filling: Sprinkle the cheese over the pastry base. Fry the bacon pieces until crisp and sprinkle over the cheese. Add the spinach and carefully mix the ingredients in the pastry case.

4.    In a bowl mix the eggs, milk, cream, salt and pepper until well combined. Pour over the ingredients in the pastry case.

5.    Bake for 40 minutes or until set in the middle. Allow to cool and serve.
