Steamed honey pears

Small red dates are usually used for this recipe but we used ordinary dates instead. The coconut cream is delicious with the pudding.

100 g dates, pitted

6 unblemished ripe pears

90 ml honey

coconut cream to serve

Soak the dates in hot water for a few minutes if they’re dry.

Drain well and cut into strips.

Slice off the base of each pear so it will stand upright.

Cut off 2,5 cm from the top of each pear and set aside.

Core the pears from the top using a small, sharp knife.

Take care not to cut all the way through to the bottom.

Arrange the pears upright on a heat-resistant platter or a bamboo steamer.

Spoon 15 ml honey into each pear hollow and put a few date strips inside.

Cover the pears with the top sections and put the platter or steamer over simmering water in a wok or saucepan.

Steam for 30 minutes or until the pears are soft.

Serve hot with a little warm coconut cream.
