Steamed syrup pudding

A traditional pudding that’s simple to make but the ultimate comfort food.

Serves 4-6 Preparation: 10 min Cooking: 2 hours

125 ml (½ c) golden syrup

125 g butter

125 ml (½ c) caster sugar

2 eggs

375 ml (1 ½ c) self-raising flour

160 ml (? c) milk

ice cream to serve

1 Grease a 1-litre ceramic pudding bowl or enamel bowl. Pour the syrup into the bottom.

2 Beat the butter and sugar together until pale and creamy. Add the eggs one at a time, beating well after each addition. Stir in the flour and milk.

3 Spoon the mixture into the prepared bowl and smooth the top. Cover the bowl with a muslin cloth and knot loosely on top.

4 Put the pudding bowl into a large pot. Pour boiled water into the pot until it reaches halfway up the side of the bowl. Cook, covered, over medium-low heat for 2 hours or until a skewer inserted in the middle of the pudding comes out clean. Set aside for 5 minutes then turn out.
