Sticky lamb ribs

The longer the ribs are left to marinate the better their flavour.

Makes 12-15 bites

Preparation time: 15 min

Standing time: overnight

Cooking time: 15-20 min

800 g lamb ribs

salt and freshly ground black pepper

80 g red salad onions, chopped

2 cloves garlic, chopped

1 chilli, chopped

125 ml (½ c) chopped coriander

45 ml (3 T) sesame oil

50 ml sweet soy sauce

tomato and cucumber salsa

1 Ask your butcher to cut the lamb ribs into serving size pieces.

2 Season the meat with salt and pepper and put it in a glass dish.

3 Mix the remaining ingredients, except the salsa and pour the mixture over the ribs. Marinate overnight.

4 Cook the marinated ribs over medium-hot coals, occasionally basting them with the marinade until they are done and crisp.

5 Serve with tomato and cucumber salsa.
