Stir-fried calamari with slaw

A delicious light offering for warmer days

Serves 4

Preparation time: 35 min

Cooking time: 5 min

500 g calamari tubes and tentacles

250 ml (1 c) buttermilk

SLAW

1 fennel bulb, shredded

½ red cabbage, shredded

3 asparagus spears, thinly sliced

1 onion, sliced

DRESSING

juice of 1 lemon

15 ml (1 T) honey

80 ml (? c) balsamic vinegar

TO COMPLETE

olive oil

salt and freshly ground black pepper

1 Wash the calamari under running water. Cover in the buttermilk and set aside to soak for 30 minutes.

2 Slaw: Meanwhile prepare the vegetables, cover in cold water and set aside for 20 minutes.

3 Dressing: Mix the dressing ingredients until well incorporated.

4 To complete: Drain and dry the calamari. Drizzle with olive oil and season with salt and pepper. Place a pan over high heat and stir-fry the calamari until cooked.

5 Drain the vegetables and season with salt and pepper.

6 Serve the calamari and slaw with the dressing.
