Stork competition and a recipe for a fresh fruit cake with ginger cream cheese frosting

Buy any Stork BAKE brick, SMS the words STORK BAKE5, plus the last 5 digits of your Stork Bake barcode followed by your name and surname to 34923 by 5 pm on 25 November 2011. Each SMS costs R1,50. FRESH FRUIT CAKE WITH GINGER CREAM CHEESE FROSTING

Icing

250 g cream cheese

30 ml (2 T) chopped ginger preserve

30 ml (2 T) ginger preserve syrup

80 ml (1/3 c) softened STORK BAKE

125 ml (½ c) icing sugar, sifted

canned baby apples for decoration

500 ml (2 c) cake flour

Cake

10 ml (2 t) baking powder

3 ml (generous ½ t) salt

10 ml (2 t) ground cinnamon

2 ml (½ t) nutmeg

180 g STORK BAKE

80 ml (1/3 c) milk

250 ml (1 c) caster sugar

45 ml (3 T) lemon zest

2 eggs

7 ml (½ t) vanilla essence

750 ml (3 c) grated apples or pears

125 ml (½ c) chopped walnuts

Preheat the oven to 180 °C. Grease two 20-cm cake tins with margarine. Dust with flour.

ICING

Whisk together the cream cheese, ginger preserve and syrup.

Cream together the STORK BAKE and icing sugar and mix with creamed cheese.

Set aside.

CAKE

Sift together the dry ingredients in a bowl.

Melt the STORK BAKE, milk and caster sugar.

Add the zest.

Cool.

Whisk in the eggs and vanilla essence.

Add to the dry ingredients together with the grated fruit and nuts.

Mix well and divide between the two tins.

Bake for 40-45 minutes or until done.

Cool in the tins, then turn out onto a wire rack to cool completely.

Sandwich together with some of the icing and spread the rest of the icing on top.

Garnish with baby apples.
