Strawberry almond crumble

Who knew comfort food could be so pretty?

Makes a 25cm tart Preparation time: 30 min Baking time: 25-30 min

PASTRY

  • 250 g butter
  • 10 ml (2 t) vanilla essence
  • 2 large eggs
  • 400 g flour

FILLING

  • 125 ml (½ c) apricot jam
  • 125 g marzipan
  • sliced strawberries dusted with icing sugar to serve (optional)

Preheat the oven to 180 °C and grease a 25 cm tart dish.

1. PASTRY Combine the butter, vanilla essence, eggs and flour and mix well until the pastry comes together.

2. Divide the pastry in two and press half into the prepared tart dish. Chill the second portion.

3. FILLING Spread apricot jam over the pastry and grate the marzipan over the apricot jam.

4. Grate the remaining pastry over the marzipan to cover evenly.

5. Bake for 25-30 minutes until a golden tea colour. Serve with sliced strawberries  dusted with icing sugar, if using.
