Stuffed chicken in lemon mayo and yoghurt sauce

Serves 6-8

STUFFING

1 onion, finely chopped

juice and grated rind of 1 lemon

fresh herbs like parsley, chives or basil

2 rounds (200 g) feta cheese

salt and black pepper

CHICKEN

8 large chicken breasts with skin

30 ml (2 tbsp) olive oil

SAUCE

250 ml (1 cup) plain yoghurt

250 ml (1 cup) mayonnaise

grated rind of 2 lemons

juice of 1 lemon

4 cloves garlic, finely chopped

30 ml (2 tbsp) chopped

Parsley

Preheat oven to 180 °C and grease a large baking tray.

STUFFING

Mix stuffing ingredients.

CHICKEN

Make a small opening between skin and meat and pack in stuffing.

Season with salt and pepper.

SAUCE

Mix sauce ingredients and set aside.

Rub the chicken with oil, place in the baking tray.

Spoon sauce over and cover the tray with foil.

Bake for 30 minutes, until cooked, then remove foil.

Bake for 10 to 15 minutes, until browned.

Transfer chicken to a serving dish.

Boil sauce in a saucepan until reduced.

Serve the chicken with sauce, rice and veggies.

TIP Spinach and mushrooms also make a tasty stuffing.
