Stuffed chicken with mango and rocket salad

A perfect combo for long, lazy summer days

 Serves 4

Preparation time: 15 min

Cooking time: 20 min

4 chicken breasts

100 g mushrooms, finely chopped

30 g spinach, finely chopped

15 ml (1 T) chicken spice mix

10 ml (2 t) paprika

15 ml (1 T) oil

2 mangos

40 g rocket leaves

1    Preheat the oven to 180 °C. Cut a horizontal slit in the middle of each chicken breast to make a pocket.

2    Mix the mushrooms and spinach and spoon into the pocket. Close the pocket with cocktail sticks.

3    Mix the chicken spice, paprika and oil and rub over the chicken. Transfer to a rack over a baking sheet and roast for 20 minutes.

4    Peel and slice the mangoes and arrange on four plates. Top with the rocket leaves and stuffed chicken.
