Stuffed mushrooms

Serves 2-4

8 large brown mushrooms

6 spring onions, finely chopped

50 g spinach, finely chopped

zest of 1 lemon

juice of ½ lemon

125 ml (1/2 c) Parmesan cheese, grated

1 egg, whisked

salt and pepper to taste

1. Preheat the oven to 220 °C and grease a baking sheet.

2. Put the mushrooms on the prepared baking sheet.

3. Mix the remaining ingredients and divide the mixture among the mushrooms, pressing it down with the back of a spoon to prevent it from falling off.

4. Bake the mushrooms for about 15-20 minutes or until done. Serve with toast and flavoured mayonnaise.
