750 g pork belly, skin removed and diced

250 g streaky bacon, diced

125 ml (½ c) pineapple, peeled and diced

2 red chillis, seeded and finely chopped

30 ml (2 T) finely chopped fresh garlic

30 ml (2 T) finely chopped fresh coriander

30 ml (2 T) finely chopped fresh parsley

30 ml (2 T) paprika

30 ml (2 T) mustard powder

5 ml (1 t) nutmeg 30 ml (2 T) black pepper 30 ml (2 T) salt 125 ml (½ c) ice water pork sausage casings, cleaned and soaked in water

  1. Fit the mincer blade with the largest holes onto the mincing attachment of a food processor. Mince the pork belly and half the bacon together.
  2. Mix in the rest of the bacon and the remaining ingredients except the sausage casings.
  3. Fit the sausage-making attachment to the food processor, then carefully thread the moist sausage casings onto the tube part of the attachment.
  4. Steadily push the sausage mixture through the machine while gently pulling the formed sausage away from the end of the tube.
  5. When the mixture is used up, form links and tie a knot at each end of the sausage string.
  6. Braai the sausage over medium-high coals and serve with a sweet mustard sauce.
