Thick chickpea soup

A perfect start to your week - delicious, tasty and a little bit of bite for a super supper idea

Preparation time: 5 min

Cooking time: about 35 min

Serves: 6

15 ml (1T) oil

1 onion, finely chopped

4 garlic cloves, chopped

2 green chillies, chopped

15 ml (1 T) allspice

2 cans (800 g) of chickpeas

500 ml (2 c) vegetable stock

2 cans (800 g) of tomato purée

salt and freshly ground black pepper

Heat the oil in a saucepan on medium heat.

Add the onion, garlic, chillies and allspice.

Cook for 5 minutes or until the onions are soft.

Add the chickpeas, stock and tomato purée.

Simmer on low heat for 25 minutes.

Remove from heat and set aside to cool.

Transfer half of the soup to a blender and purée until smooth.

Return the puréed soup to the saucepan and simmer for 10 minutes.

Season with salt and pepper, and serve with soft bread.
