Tikka pork chops

A lip-smacking dinner for whipping up on a week night.

Serves: 4 Preparation: 10 min Cooking: 20 min

  •  30 ml (2 T) tikka masala
  • 15 ml (1 T) tomato paste
  • 10 ml (2 t) brown sugar
  • 5 ml (1 t) balsamic vinegar
  • 4 loin pork chops
  • 1 mini cabbage, thinly sliced
  • 1 large carrot, grated
  • 1 apple, peeled, cored and sliced
  • 125 ml (½ c) Greek yoghurt
  • 80 ml (? c) mayonnaise
  • 5 ml (1 t) wholegrain mustard

1 Mix the masala, tomato paste, sugar and vinegar together and rub this over the pork chops. Cover with clingwrap and refrigerate for 30 minutes.

2 Place the cabbage, carrot and apple in a large bowl. Mix the yoghurt, mayonnaise and mustard together and pour over the cabbage mixture, stir well until all the ingredients are coated with the sauce.

3 Place a griddle pan on high heat and fry the chops until cooked, about 10 minutes each side. Serve with the coleslaw.
