Tomato smoor

Add vava voom to your boerewors roll with this easy-to-make tomato smoor.

Serves 6 Preparation: 10 min Cooking: 20 min

  • 15 ml (1 T) oil
  • 2 onions, finely chopped
  • 15 ml (1 T) curry powder
  • 5 ml (1 t) paprika
  • 400 g can chopped tomatoes
  • 250 ml (1 c) water
  • 1 beef stock cube
  • 15 ml (1 T) tomato paste
  • 400 g boerewors, grilled
  • 6 hotdog rolls
  • handful coriander to garnish

1 In a pan with heated oil, brown the onions until soft. Add the curry powder and paprika and fry for 2 minutes stirring constantly.

2 Add the tomatoes and water and bring to the boil. Add the beef stock cube, reduce the heat and simmer for 5 minutes.

3 Add tomato paste and allow to simmer for 10 minutes, stirring continuously until thickened. Serve the spicy tomato smoor with a boerewors roll and garnish with coriander.
