Tomato soup

Serves 4-6 Preparation time: 15 min Cooking time: 15-20 min

30 ml (2 T) olive oil 300 g bratwurst, cut into 2 cm pieces 2 large onions, finely chopped 3 cloves garlic, finely chopped salt and freshly ground black pepper 1 red pepper, seeds removed and diced 2 cans (400 g each) whole tomatoes, chopped 500 ml (2 c) vegetable stock fresh oregano 5 ml (1 t) soft brown sugar 1 can (400 g) small white beans

Heat a little of the oil in a large saucepan and fry the sausages for a few minutes.

Remove from the pan and set aside.

Heat the remaining oil and fry the onions and garlic until fragrant and season with salt and pepper.

Add the red pepper to the pan and fry until soft.

Add the tomatoes, vegetable stock, oregano and brown sugar.

Season if necessary and simmer the soup for about 15 minutes.

Add the sausages and beans to the soup and simmer for another 5-10 minutes.

Serve with freshly baked bread.

TIP: Use canned whole tomatoes and chop them; I find they give a thicker and creamier result than canned chopped tomatoes.
