Triple layer chocolate bars

A fun chocolatey snack to help fill your biscuit tin for the holidays!

Makes 18-20 bars Preparation time: 20 min Baking time: 35 min

CRUST

  • 100 g margarine
  • 150 g cake flour
  • 100 g soft brown sugar

FILLING

  • 25 g cake flour
  • 15 g cocoa powder
  • 3 ml (generous ½ t) baking powder
  • 50 g caster sugar
  • 100 g desiccated coconut
  • 2 eggs
  • 5 ml (1 t) vanilla essence

ICING

  • 40 g cocoa powder
  • 35 ml hot water
  • 25 g margarine
  • 200 g icing sugar
  • 3 ml (generous ½ t) vanilla essence

Preheat the oven to 180 °C.

Grease an 18 x 10 cm baking tin.

1 CRUST Rub the margarine into the cake flour, add the brown sugar and mix to a stiff dough.

2 Press into the baking tin and bake for 10 minutes.

3 FILLING Mix the ingredients and spread over the crust. Bake for 25 minutes. Leave to cool in the tin.

4 ICING Mix the cocoa powder with the water and beat in the margarine and icing sugar. Add the vanilla essence.

5 Spread the icing over the cooled filling. Cut into bars.
