Cheddar burgers with tomato chutney

  • Serves 4
  • Preparation time: 20 min
  • Cooking time: 20 min

You’ll need:

Meat patties

  • 500 g beef mince
  • 2 slices white or brown bread, crusts removed and soaked in milk
  • 1 onion, grated
  • 10 g parsley, finely chopped
  • 30 ml (2 T) mince spice
  • salt and freshly ground black pepper
  • 1 egg, whisked

Tomato chutney

  • 1 x 410 g can chopped tomatoes
  • 60 ml (¼ c) brown sugar
  • salt and freshly ground black pepper

Burgers

  • 30 ml (2 T) olive oil
  • 4 bread rolls
  • 100 g lettuce
  • 2 tomatoes, sliced
  • 4 slices Cheddar cheese

Do this:

  1. Meat patties: Mix the ingredients and season with salt and freshly ground pepper to taste. Divide the mixture into four and shape into patties. Cover with clingfilm and chill for at least 30 minutes.
  2. Tomato chutney: Bring the ingredients to the boil in a saucepan. Reduce the heat and simmer until the mixture thickens. Season.
  3. Burgers: Heat the oil in a pan and fry the patties until golden.
  4. Arrange lettuce and tomato slices on one half of each roll. Follow with a patty, a slice of cheese and a spoonful of chutney. Cover with the other half of the roll and secure with a cocktail stick. Serve with chips.
