Unbaked peanut squares

These squares are perfect snacks for busy kids – they’re quick to make and will keep between-meal hunger pangs at bay.

Makes 30

Preparation time: 15 min

250 ml (1 c) peanut butter

30 ml (2 T) butter 250 ml (1 c) soft brown sugar 250 ml (1 c) golden syrup 250 ml (1 c) mixed peanuts and raisins 1 litre (4 c) breakfast cereal such as Special K

  1. Grease a 32 x 23 cm baking sheet or dish with cooking spray.
  2. Heat the peanut butter, butter, sugar and golden syrup in a saucepan over very low heat until melted.
  3. Remove from the heat and stir in the peanuts and raisins and cereal. Mix well.
  4. Press the mixture into the prepared baking sheet or dish and chill until firm.
  5. Cut into squares.
TOPPINGS Make the clusters extra delicious by adding one of these toppings:
  • Toffee: in a saucepan melt 2 large Bar-One chocolate bars with a little cream and spread over the clusters.
  • Caramel: using an electric beater, beat together 1 can caramel condensed milk and a little milk until smooth and spread over the clusters.
  • White chocolate: melt half a slab of white chocolate in a glass bowl over a saucepan of boiling wateror in the microwave oven and drizzle over the clusters. Leave to set.
