Vegetarian bean casserole

Perfect for Meatless Monday - and cold winter days

RECIPE: A budget-friendly winter warmer. A budget-friendly winter warmer.

Preparation time: 10 min Cooking time: 45 min Serves 6

  • 3 x 400 g butter beans/800 g dried butter beans
  • 45 ml (3 T) oil
  • 1 onion, finely chopped
  • 3 garlic cloves, chopped
  • 60 ml (¼ c) tomato purée
  • 2 x 410 g chopped tomatoes
  • 10 ml (2 t) sugar
  • 5 ml (2 t) dried mixed herbs
  • salt and freshly ground black pepper
  • a handful of parsley, chopped

Preheat oven to 180 °C.

1.    If using dried beans, soak them overnight in water. Drain and place in a pot covered with water. Bring to the boil, reduce the heat and simmer for 50 minutes or until tender.

2.    In a pan heat the oil on medium heat and sauté the onion and garlic until the onion is soft. Add the remaining ingredients and simmer for 5 minutes. Season with salt and pepper and stir in the beans.

3.    Pour the mixture into a casserole dish and bake in the oven for 45 minutes. Allow to cool and garnish with parsley.
